How To Cook Grits
Fry the slices in bacon drippings or butter.
How to cook grits. For every 1 cup of grits add 4 cups liquid. Set the stove to high and bring the grits to a boil. For corn products I always select organic ones if possible.
Let the grits simmer gently until they are thick and very tender about 1 hour. Instead stir in maple syrup to taste before serving. Put the grits butter and salt in a sauce pan and add the water.
Continue whisking until the grits come to a boil and thicken slightly. Simmer the grits until all the water is absorbed and the grits develop a smooth and creamy texture about 40-45 minutes. Then bring it to a boil over medium heat.
Much like making pasta you need to add salt to the cooking liquid. Combine water grits and salt in 2 cup microwave-safe bowl. Microwave on HIGH 3 to 4 minutes or until thickened when stirred.
Stir in the butter and salt and serve immediately. To make grits follow a four to one ratio of water to grits you can always add more water if the grits are getting too thick before they finish cooking. I recommend saving half and half or cream to be added in the last minute of cooking.
Some cooks like to replace up to half the water with milk to make their grits creamier. Grits may be the great Southern States breakfast staple but it also finds its way into many savory and sweet recipes all over the world. Microwave ovens vary in power cooking times may need to be adjusted.
