Cheesy Potato Pancakes

Cheesy potato pancakes. In a large bowl mix together mashed potatoes cheese egg green onions and flour until combined. Mix well and form a dough. When combined and pan-fried till golden brown these Cheesy Potato Pancakes are irresistible.
In a large bowl combine potatoes onion and egg. In a large bowl combine the mashed potatoes shredded sharp cheddar cheese green onions whisked egg and 2 tablespoons of flour. Add cooked crumbled bacon or corned beef to the batter before cooking.
Use Swiss or Provolone cheese in place of the cheddar. Place the potatoes into a pot of lightly salted water to cover. Cook until the potatoes are soft when pierced with fork.
Add a tablespoon of salt and place some peeled quartered russet potatoes in the water. Mixture should be thick and able to grab and roll into ball with hands. Whisk the eggs and the water together in a shallow dish.
If it is not then add a little more flour a little at a time until desired consistency is reached. 12 cup 50g Parmesan cheese. Using a tablespoon scoop the mashed potatoes about 1 ½ inch round and place onto a baking sheet.
1 tsp 5g salt. Mash them well or put them through a potato ricer. Sea salt and freshly cracked pepper to taste.
